Thin lacy sweet wheat pancakes from a batter of atta, milk and jaggery — the morning festival sweet of the Kangra Valley.
Ingredients
- 1 cup whole wheat flour (atta)
- 1.5 cups milk
- 3 tbsp jaggery — dissolved in 2 tbsp warm water
- 1/4 tsp cardamom powder
- A pinch of salt
- Ghee for cooking
Method
- Combine atta and a pinch of salt in a bowl.
- Add dissolved jaggery water and milk gradually, whisking continuously to prevent lumps, until a smooth thin batter forms.
- The batter should be quite thin — thinner than dosa batter.
- Rest 10 minutes.
- Heat a flat non-stick tawa on medium. Add 1/2 tsp ghee.
- Pour a small ladle of batter onto the hot tawa.
- Tilt the pan quickly in circular motions to spread the batter as thin as possible — patande should be very thin and lacy.
- Cook on medium for 2 minutes until the edges lift and the bottom is golden. Flip carefully. Cook 1 minute.
- Fold into quarters or roll. Serve immediately with a drizzle of ghee.
