Flat fried bread made from buckwheat flour stuffed with a spiced black gram filling. A speciality of the Kullu valley and the Lahaul-Spiti high-altitude region where buckwheat is one of the few grains that grows at 3000 metres.
Ingredients
For the babru dough:
1.5 cups buckwheat flour (kuttu ka atta — available at Indian grocery stores and health food stores)
1/2 cup wheat flour (added for binding — buckwheat alone cracks when rolled)
warm water — about 3/4 cup
a pinch of salt
For the urad dal filling:
1/2 cup urad dal (split black gram without skin) — soaked 3 hours
1 tsp ginger paste
2 green chilli — finely chopped
1/2 tsp cumin seeds
salt to taste
oil for shallow frying
Method
Make the urad dal filling: Drain soaked urad dal completely. Place in a mixer with ginger paste, green chilli, cumin seeds and salt. Grind with minimal water — just 1 to 2 tbsp — to a coarse, thick paste. Do not make it smooth. Divide into 8 portions.
Make the buckwheat dough: Mix buckwheat flour, wheat flour and salt in a bowl. Add warm water gradually while mixing. Knead for 4 minutes until a smooth, pliable dough forms. Buckwheat alone is fragile — the wheat flour addition creates the gluten needed for rolling and folding.
Rest the dough: Cover with a damp cloth. Rest 15 minutes.
Divide into balls: Divide dough into 8 equal balls.
Stuff each ball: Flatten one ball in your palm into a disc about 8 cm wide. Place one dal filling portion in the centre. Seal the edges firmly, bringing them upward and pinching closed. Re-roll gently into a smooth ball.
Roll into flat rounds: On a lightly floured surface roll the stuffed ball into a flat round about 12 cm in diameter and about 5 mm thick. Roll gently — buckwheat dough tears if rolled too thin.
Heat oil for shallow frying: Pour oil to 1 cm depth in a wide flat pan. Heat on medium.
Fry first side: Place the babru in the hot oil. Shallow fry on medium heat for 2 to 3 minutes until the bottom is golden.
Flip and fry second side: Flip carefully. Fry 2 to 3 minutes on the second side. Press gently with a spatula to ensure even contact with the oil.
Drain and serve: Remove from oil. Drain briefly on paper towels. Serve hot with yogurt or coriander chutney.
Note: Babru is the traditional fried bread of the Kullu valley and the Lahaul-Spiti cold desert. Buckwheat is one of the few grains cultivated above 3000 metres altitude in Himachal Pradesh — in regions like Lahaul, Spiti and Kinnaur where wheat cannot grow due to the extreme cold and short growing season. Buckwheat flour has a distinctive earthy, slightly bitter flavour and is naturally gluten-free (though this recipe adds wheat flour for workability). Eaten as breakfast in mountain homes.
