Pearl millet flour cooked with jaggery and water into a thick warming drink — the traditional Haryanvi winter health drink given to new mothers and consumed after physical work.

Ingredients

Method

  1. Bring 2 cups water to a boil in a small pot.
  2. In a small bowl mix bajra flour with 3 tbsp cold water to a smooth lump-free paste.
  3. While stirring the boiling water continuously, pour the bajra paste in a thin stream.
  4. This prevents lumps from forming.
  5. Reduce to medium. Add grated jaggery. Stir until dissolved.
  6. Add ginger powder and ajwain. Stir.
  7. Simmer stirring for 6 to 7 minutes until the raab thickens to a thin porridge consistency — it should pour freely but have definite body.
  8. Add ghee. Stir.
  9. Pour into cups and drink warm.
