Whole small potatoes cooked in a fragrant red yogurt gravy spiced with fennel, ginger powder and warm spices — the Northern UP version influenced by Kashmiri cooking. No onion or garlic — all the flavour comes from the spices and yogurt.

  1. Prepare the potatoes: Boil small potatoes whole with skin in salted water for 12 minutes until just tender. Peel. Using a fork, prick each potato about 10 times all over. The pricking allows oil and spices to penetrate the potato surface during cooking, flavouring the inside.
  2. Fry the potatoes until blistered: Heat 3 tbsp mustard oil or ghee in a heavy pot until very hot. Add the pricked potatoes. Fry on medium-high heat, turning occasionally, for 6 to 8 minutes until the outside is golden and slightly blistered. Remove with a slotted spoon.
  3. Reduce heat and add whole spices: In the same oil, reduce heat to medium. Add cumin seeds — wait for them to crackle. Add bay leaves, crushed cardamom, cloves, cinnamon and dried red chilli. Let the whole spices sizzle for 20 seconds until very fragrant.
  4. Add asafoetida: Add a pinch of asafoetida. Stir for 5 seconds. The asafoetida replaces the onion-garlic element that would normally be used — it provides a similar savoury depth without the pungency of raw alliums.
  5. Prepare the yogurt mixture: In a bowl combine the beaten smooth yogurt with Kashmiri red chilli powder, fennel powder, dry ginger powder and coriander powder. Mix well — the yogurt will turn red from the Kashmiri chilli. This combination of yogurt and spices with no onion or garlic is the Kashmiri technique used across upper UP.
  6. Add yogurt mixture on low heat — critical step: Reduce heat to the absolute lowest setting. Pour the spiced yogurt mixture into the hot oil and spices. Stir immediately and continuously. Adding yogurt to hot oil on high heat will cause it to separate and look broken — low heat and constant stirring are essential.
  7. Cook the yogurt mixture for 5 minutes: Stir on low heat for 5 minutes until the yogurt cooks into the oil. The mixture will change from pale red to a deeper, glossy red colour as the water from the yogurt evaporates.
  8. Add the fried potatoes: Add the fried potatoes. Stir gently to coat every potato with the red spiced yogurt mixture.
  9. Add water and cook covered: Add 1/2 cup warm water and salt. Stir. Cover tightly. Cook on very low heat for 15 to 20 minutes — the sealed, slow cooking allows the potatoes to absorb all the flavour.
  10. Finish and serve: Open the lid. The gravy should be thick, red and clinging to the potatoes. Taste and adjust salt. Scatter coriander leaves. Serve with naan, roti or steamed rice.
  11. Note: This style of dum aloo without onion-garlic reflects the cooking of many UP Brahmin households and religious communities where onion and garlic are avoided on certain days. The Kashmiri influence is strong in upper UP cooking, particularly in cities like Varanasi and Mathura. The fennel and dry ginger combination is the spice signature of Kashmiri cooking.
