Classic Kerala dish — crab thoran with crab meat stir-fry.
Ingredients
- - 400g crab meat stir-fry
- - 2 tbsp coconut oil
- - 1 fresh coconut (milk extracted)
- - 2 shallots
- - 2 green chillies
- - 1 sprig curry leaves
- - 1/4 tsp turmeric
- - Salt to taste
Method
- Clean crab: Clean 2 crabs thoroughly. Break into pieces. Crack claws. Marinate with half tsp turmeric and salt.
- Make coconut mixture: Mix half cup freshly grated coconut with half tsp turmeric, 1 tsp cumin, 2 green chillies and 3 shallots sliced.
- Shred crab meat: Cook crab pieces in a little water 8-10 minutes. Remove shell, shred the meat out. Combine with coconut mixture.
- Heat coconut oil: Heat 2 tbsp coconut oil in a wide pan.
- Splutter mustard seeds: Add 1 tsp mustard seeds and cover until all pop.
- Add aromatics: Add 2 dried red chillies and 2 sprigs curry leaves. Fry 20 seconds.
- Add shallots: Add 8 sliced shallots and fry 5 minutes until golden.
- Add crab-coconut mixture: Add the crab and coconut mixture. Season with salt.
- Toss and cook: Cook on medium heat 5-6 minutes until well combined and dry.
- Serve: Adjust salt. Crab thoran is dry and fragrant. Serve with steamed rice.
