Classic Andhra/Telangana crab curry andhra — crab in bold South Indian spices.
Ingredients
- - 400g crab
- - 3 tbsp sesame oil
- - 2 large onions
- - 2 tomatoes
- - 1 tbsp ginger-garlic paste
- - 1 tsp red chilli powder
- - 1 tsp coriander powder
- - 1/2 tsp turmeric
- - 1 sprig curry leaves
- - Salt to taste
- - Fresh coriander
Method
- Clean crab: Clean 2 large crabs thoroughly. Break into halves, remove gills. Crack claws lightly. Marinate with 1 tsp turmeric and salt.
- Make coconut paste: Blend half cup fresh grated coconut with 4 garlic cloves and 1 tsp cumin to a smooth paste.
- Fry onions: Heat 3 tbsp sesame oil. Add 1.5 cups finely chopped onions. Cook on medium heat 12 minutes until golden.
- Add ginger-garlic and tomatoes: Add 1.5 tbsp ginger-garlic paste, then 3 chopped tomatoes. Cook 8 minutes.
- Add spice powders: Add 2 tsp red chilli powder, 1.5 tsp coriander powder and half tsp turmeric. Fry 3 minutes.
- Add coconut paste: Add coconut paste. Fry 5-6 minutes until oil separates.
- Add crab: Add marinated crab pieces. Toss to coat. Cook on high heat 5-6 minutes.
- Add water: Add 1 cup water and salt. Cover and cook on medium heat 15-18 minutes until crab is bright orange-red.
- Thicken: Uncover and cook 5 minutes until sauce thickens.
- Serve: Adjust salt. Andhra crab curry is boldly spiced. Serve with steamed rice and provide finger bowls.
