Classic Karnataka rice dish — coconut milk rice karnataka.

  1. Wash and soak rice: Wash 2 cups raw rice. Soak 20 minutes. Drain.
  2. Make coconut milk: Blend 1.5 cups freshly grated coconut with 1.5 cups warm water. Squeeze and strain for thick milk. Repeat for thin milk.
  3. Heat oil and bloom spices: Heat 2 tbsp oil. Add 1 bay leaf, 3 cloves and 2 cardamoms. Fry 30 seconds.
  4. Add shallots: Add 8 sliced shallots and fry 6-8 minutes until golden.
  5. Add green chilli and ginger: Add 2 slit green chillies and 1 tsp grated ginger. Fry 1 minute.
  6. Add drained rice: Add rice. Toss gently 2 minutes.
  7. Add coconut milk: Add 1 cup thick coconut milk and 1.5 cups thin coconut milk. Add salt. Stir once and bring to a boil.
  8. Cook covered: Reduce to lowest heat. Cover tightly. Cook 15 minutes without lifting lid.
  9. Rest: Turn off heat. Rest covered 5 minutes.
  10. Serve: Fluff gently with a fork. Karnataka coconut milk rice is fragrant and rich. Serve with any curry or raita.
