Steamed rice flour dumplings stuffed with spiced mashed potato — the filling everyday snack of Chhattisgarh found at markets and home kitchens throughout the state.
Ingredients
For outer layer:
1.5 cups rice flour
Hot water — approximately 1/2 cup
1/2 tsp salt
For filling:
3 medium potatoes — boiled, peeled and mashed
2 green chillies — very finely chopped
1/2 tsp cumin seeds — coarsely crushed
1/4 tsp amchur
1/4 tsp red chilli powder
2 tbsp fresh coriander
Salt to taste
Method
Make filling: combine mashed potato with finely chopped green chillies, cumin, amchur, red chilli powder, coriander and salt.
Mix and divide into 10 portions.
Make dough: combine rice flour and salt. Add hot water gradually, kneading with wet hands, into a smooth moist dough.
Divide into 10 balls. Wet palms. Flatten one ball in the palm into a round 8 cm wide.
Place one portion of potato filling in the centre.
Fold dough over and seal edges firmly by pressing.
Shape into a smooth oval or round dumpling.
Set up a steamer. Place dumplings on an oiled cloth in the steamer basket.
Steam on medium for 18 to 20 minutes until firm and cooked through. Test with a toothpick.
Serve warm with green chutney or tamarind chutney.
