Tamil Nadu breakfast — Tamil Nadu bread omelette — egg between two slices with spiced filling.
Ingredients
- egg omelette with bread as main
- Oil or ghee for cooking
- Spices as required
- Salt to taste
- Fresh coriander
Method
Make egg omelette batter: Beat 2-3 eggs with 1 finely chopped onion, 2 finely chopped green chillies, half tsp red chilli powder, half tsp turmeric, fresh coriander and salt.
Cook the omelette: Heat 1 tbsp oil in a flat pan. Pour the egg mixture and spread into a thin flat round. Cook on medium heat 2-3 minutes until just set on top. Do not flip yet.
Prepare bread: Take 2-3 slices of white bread. Trim crusts if desired.
Place bread on omelette: While the omelette is still slightly wet on top place the bread slices directly on the omelette.
Press bread: Press the bread gently into the egg with a spatula.
Flip: Once the egg sets and adheres to the bread, flip the whole thing. The omelette is now on top.
Cook bread side: Drizzle a few drops more oil around the edges. Cook the bread side 2-3 minutes until golden and slightly crispy.
Cut: Remove and cut into triangles or squares.
Add sauces: Spread tomato ketchup or green chutney on top if desired.
Serve: Tamil style bread omelette should have a spiced egg on one side and toasted bread on the other. Serve hot as a street food breakfast.
