Whole wheat paratha stuffed with a mustard oil-dressed sattu filling — the protein-packed everyday breakfast flatbread of Bihar.

  1. Make dough: knead atta and salt with water into a smooth soft dough. Rest 20 minutes.
  2. Make filling: combine sattu, mustard oil, kalonji, ajwain, green chillies, ginger, lemon juice, coriander and 2 to 3 tbsp water into a moist, crumbly paste. Season with salt.
  3. Divide dough into 8 balls. Flatten each into an 8 cm circle.
  4. Place 2 tbsp filling in centre. Bring edges up and seal completely.
  5. Gently flatten and roll out to 15 cm.
  6. Heat a tawa on medium. Cook paratha 2 to 3 minutes until golden spots appear.
  7. Flip. Apply ghee. Cook 2 minutes. Flip again.
  8. Apply ghee on second side. Cook 1 minute.
  9. Serve hot with yogurt, pickle and raw onion.
