Whole wheat paratha stuffed with a mustard oil-dressed sattu filling — the protein-packed everyday breakfast flatbread of Bihar.
Ingredients
For dough:
2 cups whole wheat flour (atta)
1/2 tsp salt
Water — soft dough
For sattu filling:
3/4 cup sattu (roasted gram flour)
1 tbsp mustard oil
1/4 tsp kalonji (nigella seeds)
1/2 tsp ajwain
2 green chillies — very finely chopped
1 tsp ginger — grated
1 tbsp lemon juice
2 tbsp fresh coriander
Salt
2 to 3 tbsp water
Ghee for cooking
Method
Make dough: knead atta and salt with water into a smooth soft dough. Rest 20 minutes.
Make filling: combine sattu, mustard oil, kalonji, ajwain, green chillies, ginger, lemon juice, coriander and 2 to 3 tbsp water into a moist, crumbly paste. Season with salt.
Divide dough into 8 balls. Flatten each into an 8 cm circle.
Place 2 tbsp filling in centre. Bring edges up and seal completely.
Gently flatten and roll out to 15 cm.
Heat a tawa on medium. Cook paratha 2 to 3 minutes until golden spots appear.
